Organization Description

A 1937 heritage-designated Art Deco venue in Toronto's Bloorcourt neighbourhood, Paradise reopens in 2019 following a highly anticipated renovation. 

Paradise offers a unique, welcoming experience through food, drink and the arts. The complex includes: Paradise Theatre, a state-of-the-art venue presenting a curated mix of newly released films, older classics and undiscovered gems, as well as live music, talk series and multi-arts events; Osteria Rialto, a full-service restaurant offering up fresh, seasonal ingredients in dishes that innovate on classic Italian cuisine; and Bar Biltmore, where spritzes, sours and negronis are enjoyed alongside small bites. With the potential for corporate bookings, banquet and event catering will complete the multiple offerings created in the Paradise space.

Job Description

As a part of the Paradise restaurant team, the fundamental duties of the line cook include responsibility for food preparation, lunch and/or dinner service, station management, daily ordering and kitchen cleaning. Line cooks will execute their duties under the direction and supervision of the back-of-house management team, which includes our Executive Chef, Executive Pastry Chef, Chef de Cuisine and multiple Sous Chefs. We're looking for passionate, knowledgeable and skilled line cooks with the aptitude to grow professionally and demonstrate a team-first mindset to help bring the vibrant and exciting atmosphere of the century-old landmark to life.

Responsibilities (include but are not limited to the following)

  • Maintain an in-depth knowledge of Paradise menus

  • Responsible for station food production including that used for Osteria Rialto (restaurant), and Bar Biltmore (cocktail bar) 

  • Prepare food to the specifications of the Paradise menu, in compliance with health and safety policies and direction of back-of-house management team

  • Strong and effective communication with Sous Chefs, Chef de Cuisine, Executive Chef, and Executive Pastry Chef 

  • Interact with fellow employees in a friendly, professional and knowledgeable manner

  • Organize yourself and your station for success each service 

  • Ability to set goals to achieve success short-term and long-term

  • Maintain daily cleanliness and sanitation of your production and service areas, equipment and your appearance

  • Demonstrate knowledge of standard kitchen procedures like scaling, large batching, product ordering

  • Develop personal kitchen skills such as knife skills, meat and fish butchery, vegetable cooking, etc. 

  • Increase knowledge of and exposure to all cooking methods such as roasting, stewing, etc.

  • Ability to deal with high pressure environments while maintaining a standard set by management and yourself

Requirements

Work Environment:

  • The work environment can be loud and busy

  • There are many kitchen hazards such as hot surfaces, liquids, sharp knives and slippery floors

  • This position regularly requires long hours and weekend work

Physical Demands:

  • The employee is required to stand for up to 12 hours at a time as well as walk, bend, stoop, climb, balance, kneel and crawl 

  • The position requires working taste buds, ability to smell, feel with fingers and visually inspect, including close and distance vision

  • This position requires the ability to use your arms, hands and manipulate fingers to reach, stir, measure, pour, cut, chop, dice, decorate, etc.

  • Repetitive hand and arm motions

  • Lifting and/or moving up to 20 lbs. regularly; occasionally lifting and/or moving up to 50 lbs.

  • Manual dexterity required to use computer and peripherals

Experience:

  • 1-2 years of experience in high-volume food production or catering in a cooks position

  • Understanding of basic pastry techniques, equipment and material

  • Understanding of basic culinary techniques, professional cooking equipment and material

  • Knowledge of safety, sanitation and food handling procedures

Skills:

  • Ability to manage one’s self calmly and effectively under pressure
